Summertime is the perfect time to experiment with creating fresh fruit cakes. Grocery stores and farmer’s markets are stocked with fresh produce, giving you plenty of fruity choices to decorate and accent your watermelon cake.
Fresh fruit cakes make a wonderful, healthy alternative to traditional bakery cakes. Not only will your friends and family be impressed with your creativity but they can happily indulge in a slice without feeling guilty or breaking any diet rules.

Cherri Cooper sent us this watermelon cake that she made for a wedding shower.
I used plastic “toothpicks” that had a little heart on the end of them and cut the strawberries to look like hearts. Then, I also used the heart picks to make mini kabobs for the top.”
We love the creativity and the heart-shaped strawberries are a nice touch, especially for a wedding shower!
