If you are not familiar with the AFC here’s a bit of info about it. The American Culinary Federation (ACF)  comprises more than 22,000 members in 230 chapters across the United States. It’s a non-profit organization based on promoting the professional image of American chefs worldwide through education of culinarians at all levels. They offer educational programs, culinary competitions, chef certification, a national apprenticeship program, regional and national events and publications. The membership contains lots of chefs and culinary students yet, you don’t have to be a chef or aspiring chef to be a member. You can get more information at http://www.acfchefs.org/

I just learned that a past student/customer who has gone on to be a professional fruit carver, Pat O’Brien, is one of the presenters at the Cook. Craft. Create. ACF National Convention and Show. Unfortunately HIS CLASS IS NOW FULL. Pat has won gold medals at ACF competitions and has carved for a televised event. Pat stumble across my website a couple of years ago. He started learning from my video lessons. He was a quick learner and quickly became talented carver.

Pat's gold medal winning fruit carving arrangement is an example of the types of carving you may see at the American Culinary Classic Competition

This is a section of Pat OBrien’s gold medal winning fruit carving arrangement at a past annual AFC competition. This is how Pat (1) carved only 1 year after his first melon carving attempt. Remarkable progress in only 1 year, don’t you think?

I can’t tell you how much you’re work and dvds have inspired me. Thank you for leading the way in carving and teaching me (virtually of course) so much.
Have a wonderful day, Patrick O’Brien
